Some of the health benefits of buckwheat flour are that it is rich in iron, a great source of protein, can help aid digestion AND is also gluten free for those who are intolerant. The health benefits of coconut oil are that it boosts metabolism and can aid weight loss, helps maintaning cholesterol levels, helps with sugar cravings and boosts the immune system.
1 cup of buckwheat flour
1 cup of almond meal
1 tsp of cinnamon
1/4 cup coconut oil
1 tsp vanilla essence
3 tbsp of rice malt syrup or raw honey
1/2 tsp of bicarb soda
A Squeeze of lemon
Small hand full of pineapple- More or less depending on what you like
Preheat the oven to 160C and lightly oil you baking tin.
Mash the bananas and combine with the eggs, cinnamon, vanilla essence, coconut oil, bicarb soda & lemon and the rice malt syrup. Mix well (you can do this by hand or with an electric mixer). Next add the almond meal and the buckwheat flour and mix well. Lastly, add the pineapple and the walnuts to the mix.
Pour the mix into the tray and smooth over with a spoon. Finish by sprinkling some cinnamon and walnuts on top and put into the oven for roughly 45 minutes.
Warmed up with butter
With natural yoghurt, nuts and fresh berries.
