Shopping list:

Corn chips

Avocado

Tomato

Red onion

Sweet corn kernels

Fresh coriander

Fresh lemon or lime juice

Olive oil

Salt and pepper to taste

How to?

Finely dice 1/2 a red onion, 1 tomato, 1 avocado, add to serving bowl and squeeze with fresh lemon juice to keep the avocado’s colour. Roughly chop fresh coriander- be as generous as you like! Drain corn kernels and add to mix. Drizzle with olive oil (extra virgin) and season with salt and pepper.

Tip: Store in fridge prior to serving to enhance the individual flavours.
